Caviar is the processed salted roe of numerous species of fish which with variety have their own unique taste. It is considered a delicacy in many areas, including the United States. Caviar is quite expensive, and the higher quality you are looking for, the more of a premium price you will pay to get it. There are many varieties of caviar. Iranian and American caviar are very popular. Iranian caviar comes from beluga, sevruga, and osetra. Russian Caviar availability also comes from beluga, sevruga and osetra. American comes from bowfin, white fish, sturgeon, paddlefish and salmon. The rare golden Sterlet caviar was once the favoriteof Czars and emperors, but the species is now nearly extint.

Maine Lobster

The Maine Lobster goes by several aliases including American lobster and Northern lobster. This creature thrives in cold currents of water. Lobsters are solitary and nocturnal. They live in areas with rocks that provide them with a place to hide from predators. The lobsters have many predators including codfish, haddock, flounders and even other lobsters. Lobsters shells are usually a blend of the three primary colors, red, yellow and blue. The colors blend together, giving the impression that lobsters are a greenish color.

Delicacies

A delicacy is any food that is unique to the area it comes from. Delicacies are often rare foods that are hard to get hold of or prepare. As a result, they may only be served on special occasions. Often the rarity and the complexity to prepare such dishes are very expensive compared to other local foods. Delicacies come from all over the world. Some may not sound appetizing at all, but they are somewhere out there!

Olympia Oysters

The Olympia oyster is very popular, and used by culinary chefs all over the world. The oyster is native to the pacific coast of North America. It lives within certain parts of marine or salty water. The shell is highly calcified because it protects the soft body.

Peking Duck

Peking duck is a domesticated duck, which is used primarily for its eggs and meat. The Peking Duck has been a favorite dish since the 15th century. The imperial Ming family ate in weekly as well as at all celebrations. The duck weighs about 8 pounds. It has a yellow bill and creamy white feathers, complete with orange shanks and toes.
